  • 1/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar (for filling)
  • 1 tablespoon ground cinnamon
  • 1/4 cup chopped pecans
  • 1/4 cup caramel sauce
  • Extra caramel sauce (for drizzling)
  • Chopped pecans (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed bananas, softened butter, granulated sugar, brown sugar, beaten egg, and vanilla extract. Mix until well combined.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  4. In a small bowl, mix the brown sugar, cinnamon, and chopped pecans together until evenly combined.
  5. On a lightly floured surface, roll out the dough into a rectangle about 1/4 inch thick.
  6. Spread the caramel sauce evenly over the rolled-out dough. Sprinkle the cinnamon-sugar mixture over the caramel.
  7. Starting from the long edge, carefully roll the dough tightly into a log. Pinch the seams to seal.
  8. Using a sharp knife or dental floss, slice the roll into 1-inch thick pieces.
  9. Place the rolls in a greased 9×13 inch baking dish, leaving a little space between each one. Bake for 25-30 minutes or until golden brown.
  10. Once baked, allow the rolls to cool for about 10 minutes. Drizzle with extra caramel sauce and sprinkle with chopped pecans before serving.

Notes

You can prepare the rolls the night before and refrigerate them. Just let them come to room temperature before baking.
