- 1 ½ cups granulated sugar
- 1 cup unsalted butter, softened (room temperature)
- 4 large eggs (room temperature)
- 1 cup milk (whole or 2%)
- 2 teaspoons almond extract

- ½ teaspoon salt
- 1 ½ cups fresh or frozen cherries, pitted and halved (thawed if frozen)
- 1 cup unsalted butter, softened (room temperature) for frosting
- 4 cups powdered sugar for frosting
- 1 teaspoon almond extract for frosting
- 2–3 tablespoons milk for frosting (adjust for consistency)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease your cake pans with butter and dust with flour, or line them with parchment paper for easy removal.
- In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
- In another bowl, cream the softened butter and sugar together until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, incorporating each egg before adding the next. Add the almond extract and mix well.
- Gradually add the dry mixture to the wet mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined.
- Gently fold the halved cherries into the batter, distributing them evenly.
- Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to a cooling rack. Let them cool completely before frosting.
- In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well. Add almond extract and milk, adjusting for desired consistency.
- Place one cake layer on a serving plate. Spread a layer of frosting on top, then place the second layer on top. Frost the top and sides of the cake.
- Decorate with more cherries, slivers of almonds, or edible glitter if desired.
Notes
Use fresh cherries when in season for the best flavor. If using frozen cherries, ensure they are pitted and halved.
