Ingredients
Scale
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 cup canned pumpkin puree
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup vegetable oil
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar (for filling)
- 1 tablespoon ground cinnamon (for filling)
- 4 oz cream cheese, softened (for glaze)
- 1/2 cup powdered sugar (for glaze)
- 1–2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 12-cup muffin tin with paper liners or grease it lightly with cooking spray.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.
- In another bowl, combine the pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla extract. Whisk until smooth and creamy.
- Gradually add the wet ingredients to the dry ingredients. Stir gently until just combined; be careful not to overmix!
- In a small bowl, mix the granulated sugar and cinnamon for the filling.
- Spoon about a tablespoon of batter into each muffin cup. Then sprinkle a bit of the cinnamon filling over the batter. Add another tablespoon of batter on top, followed by more filling. Use a toothpick or knife to swirl the batter gently to create a marbled effect.
- Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- While the muffins are cooling, beat together the softened cream cheese, powdered sugar, and enough milk to achieve your desired glaze consistency.
- Once cooled, drizzle the cream cheese glaze over each muffin. Enjoy!
Notes
For a healthier twist, try using Greek yogurt instead of oil.
