These pumpkin spice cinnamon roll muffins combine the best of both worlds—cinnamon rolls and pumpkin spice—into a fluffy, easy-to-make delight perfect for fall mornings.


Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger

  • 1 cup canned pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for filling)
  • 1 tablespoon ground cinnamon (for filling)
  • 4 oz cream cheese, softened (for glaze)
  • 1/2 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 12-cup muffin tin with paper liners or grease it lightly with cooking spray.
  3. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.
  4. In another bowl, combine the pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla extract. Whisk until smooth and creamy.
  5. Gradually add the wet ingredients to the dry ingredients. Stir gently until just combined; be careful not to overmix!
  6. In a small bowl, mix the granulated sugar and cinnamon for the filling.
  7. Spoon about a tablespoon of batter into each muffin cup. Then sprinkle a bit of the cinnamon filling over the batter. Add another tablespoon of batter on top, followed by more filling. Use a toothpick or knife to swirl the batter gently to create a marbled effect.
  8. Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  10. While the muffins are cooling, beat together the softened cream cheese, powdered sugar, and enough milk to achieve your desired glaze consistency.
  11. Once cooled, drizzle the cream cheese glaze over each muffin. Enjoy!

Notes

For a healthier twist, try using Greek yogurt instead of oil.
