Description

This Amazing Salted Caramel Chocolate Pecan Pie combines rich chocolate, buttery pecans, and a drizzle of salted caramel for a decadent dessert that is sure to impress.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, chilled and cubed
  • ¼ tsp salt
  • 12 tbsp ice water
  • 1 cup dark chocolate chips
  • 1 cup corn syrup
  • ¾ cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups pecans, roughly chopped
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp unsalted butter, cut into pieces
  • ½ cup heavy cream
  • 1 tsp sea salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour and salt. Add the cubed butter and mix until the mixture resembles coarse crumbs. Gradually add ice water until the dough comes together. Roll it out and fit it into your pie dish.
  3. Place the pie crust in the preheated oven and bake for about 10 minutes, or until lightly golden. Remove and set aside to cool.
  4. In a large mixing bowl, melt the dark chocolate chips until smooth. Allow it to cool slightly. Add the corn syrup, sugar, eggs, vanilla, and chopped pecans, mixing well until combined.
  5. Pour the chocolate pecan filling into the cooled pie crust, spreading it evenly.
  6. Bake in the oven for 45-50 minutes, or until the filling is set but still slightly jiggly in the center.
  7. While the pie is baking, prepare the salted caramel. In a medium saucepan over medium heat, melt the granulated sugar, stirring constantly until it turns a golden amber color. Remove from heat and whisk in the butter and heavy cream until smooth. Stir in the sea salt and set aside to cool.
  8. After baking, let the pie cool on a wire rack for at least 30 minutes before serving.
  9. Drizzle the cooled pie with the salted caramel before serving.

Notes

If your pie cracks, a drizzle of salted caramel will cover it up nicely.
