  • 1 cup fresh pineapple, diced
  • 1/2 cup brown sugar, packed
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a skillet over medium heat, melt the 2 tablespoons of butter. Add the diced pineapple, 1/2 cup brown sugar, and cinnamon (if using). Cook for about 5-7 minutes, stirring occasionally, until the pineapple is tender and caramelized. Remove from heat and let cool slightly.
  3. In a mixing bowl, cream together the softened butter, 1 cup brown sugar, and 1/2 cup granulated sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the eggs one at a time, then mix in the vanilla extract until well combined.
  5. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving space between each cookie.
  7. Press a spoonful of the caramelized pineapple mixture onto each cookie dough ball.
  8. Bake in the preheated oven for 12-15 minutes or until the edges are golden brown. The centers may look slightly underbaked, but they will firm up as they cool.
  9. Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

For best flavor, use fresh pineapple. If using canned, drain well to avoid excess moisture.
