Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a skillet over medium heat, melt the 2 tablespoons of butter. Add the diced pineapple, 1/2 cup brown sugar, and cinnamon (if using). Cook for about 5-7 minutes, stirring occasionally, until the pineapple is tender and caramelized. Remove from heat and let cool slightly.
- In a mixing bowl, cream together the softened butter, 1 cup brown sugar, and 1/2 cup granulated sugar until light and fluffy (about 2-3 minutes).
- Beat in the eggs one at a time, then mix in the vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving space between each cookie.
- Press a spoonful of the caramelized pineapple mixture onto each cookie dough ball.
- Bake in the preheated oven for 12-15 minutes or until the edges are golden brown. The centers may look slightly underbaked, but they will firm up as they cool.
- Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
For best flavor, use fresh pineapple. If using canned, drain well to avoid excess moisture.
