  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (120 ml) heavy cream

  • 1 tbsp (8 g) all-purpose flour
  • Optional: 1/2 tsp lemon zest
  • Optional: 1/2 tsp espresso powder

Instructions

  1. Preheat oven to 425°F (220°C). Line an 8.5 x 4.5-inch loaf pan with parchment paper, letting the sides hang over for easy removal.
  2. Place cream cheese in a bowl and let sit at room temperature for 30 minutes, or microwave for 15 seconds to soften.
  3. Add sugar to the cream cheese and beat with an electric mixer or whisk until smooth and creamy, about 2 minutes.
  4. Add eggs one at a time, beating well after each addition and scraping down the sides.
  5. Pour in heavy cream, vanilla extract, and salt. Mix until fully blended.
  6. Sift flour over the batter and fold gently with a rubber spatula until just combined.
  7. Pour batter into the lined loaf pan. Tap gently to release air bubbles and smooth the top.
  8. Bake on the center rack for 20-25 minutes, until the top is deep golden brown and the center jiggles.
  9. Let cool in the pan for 10 minutes, then lift out with parchment and cool to room temperature.
  10. Refrigerate for at least 2 hours before serving for best texture, or serve slightly warm.
  11. Slice and serve, dusting with powdered sugar or topping with fresh berries if desired.
