- 1 cup brown sugar, packed
- 4 large eggs
- 2 teaspoons vanilla extract

- 1/4 teaspoon salt
- 1 cup brewed espresso or strong coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 16 oz mascarpone cheese, at room temperature
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- Chocolate shavings for garnish
- Cocoa powder for dusting
- Fresh mint leaves (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine melted butter, granulated sugar, and brown sugar. Mix well until smooth. Add the eggs and vanilla, then beat until fully combined.
- In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually fold the dry mixture into the wet ingredients until just combined. Be careful not to overmix!
- Pour the batter into your prepared baking pan, spreading it evenly. Bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs. Let it cool completely in the pan.
- In a small bowl, mix cooled espresso and coffee liqueur (if using). Set aside.
- In another bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract together until smooth and creamy.
- Cut the cooled brownies into squares. In your trifle dish or glasses, layer brownie pieces, drizzle with coffee mixture, and add a layer of mascarpone. Repeat layers until you reach the top, finishing with the mascarpone.
- Cover the trifle and refrigerate for at least 4 hours or overnight.
- Before serving, dust with cocoa powder and top with chocolate shavings and mint leaves, if desired.
Notes
Use high-quality cocoa powder for the brownies and fresh espresso for the best flavor. You can also experiment with flavored liqueurs.
