  • 2 cups granulated sugar
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup brewed espresso or strong coffee, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 16 oz mascarpone cheese, at room temperature
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate shavings for garnish
  • Cocoa powder for dusting
  • Fresh mint leaves (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine melted butter, granulated sugar, and brown sugar. Mix well until smooth. Add the eggs and vanilla, then beat until fully combined.
  3. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually fold the dry mixture into the wet ingredients until just combined. Be careful not to overmix!
  4. Pour the batter into your prepared baking pan, spreading it evenly. Bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs. Let it cool completely in the pan.
  5. In a small bowl, mix cooled espresso and coffee liqueur (if using). Set aside.
  6. In another bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract together until smooth and creamy.
  7. Cut the cooled brownies into squares. In your trifle dish or glasses, layer brownie pieces, drizzle with coffee mixture, and add a layer of mascarpone. Repeat layers until you reach the top, finishing with the mascarpone.
  8. Cover the trifle and refrigerate for at least 4 hours or overnight.
  9. Before serving, dust with cocoa powder and top with chocolate shavings and mint leaves, if desired.

Notes

Use high-quality cocoa powder for the brownies and fresh espresso for the best flavor. You can also experiment with flavored liqueurs.
