Description

This Cherry Almond Cream Tiramisu combines the classic Italian dessert with a fruity twist, featuring layers of cream, cherries, and toasted almonds. It’s an easy yet impressive dessert perfect for any occasion.


Ingredients

  • 1 cup heavy cream (chilled)
  • 1 cup mascarpone cheese (softened)
  • 1/2 cup powdered sugar (sifted)
  • 1 teaspoon vanilla extract
  • 1 cup fresh cherries (pitted and halved)
  • 1/4 cup cherry juice (or cherry liqueur for an adult version)
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar (adjust based on cherry sweetness)
  • 1 package ladyfinger cookies (savoiardi)
  • 1/4 cup toasted almonds (chopped)
  • Chocolate shavings or cocoa powder (for garnish)

Instructions

  1. In a medium saucepan, combine the pitted cherries, cherry juice, lemon juice, and sugar. Cook over medium heat until the cherries soften and release their juices, about 5-7 minutes. Remove from heat and let it cool.
  2. In a large mixing bowl, beat the chilled heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to beat until stiff peaks form.
  3. Gently fold the softened mascarpone cheese into the whipped cream until well combined. Be careful not to deflate the cream!
  4. Quickly dip each ladyfinger into the cherry juice mixture, ensuring they’re soaked but not soggy. Layer half of the soaked ladyfingers in the bottom of your baking dish.
  5. Spread half of the cream mixture over the ladyfingers and then spoon half of the cherry mixture on top. Repeat the process with the remaining ladyfingers, cream, and cherries.
  6. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or ideally overnight, to let the flavors meld together.
  7. Before serving, sprinkle the chopped toasted almonds on top and finish with chocolate shavings or a dusting of cocoa powder.

Notes

Use fresh, ripe cherries for the best flavor. Allowing the tiramisu to chill overnight makes a huge difference in flavor.
