  1. Prep the Pineapple: If you’re using fresh pineapple, peel, core, and crush it into small pieces. Make sure to drain any excess juice.
  2. Mix the Ingredients: In a mixing bowl, combine the shredded coconut, crushed pineapple, almond flour, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir until everything is well combined.
  3. Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for about 15-20 minutes. This makes shaping easier.
  4. Shape the Bites: Once chilled, take about a tablespoon of the mixture and roll it into small balls or shapes of your choice. Place them on a baking sheet lined with parchment paper.
  5. Optional Chocolate Drizzle: If you want to add a chocolate drizzle, melt your choice of chocolate in a microwave-safe bowl in 30-second intervals, stirring in between. Once melted, drizzle over the shaped bites.
  6. Chill Again: Place the baking sheet in the refrigerator for another 15 minutes to set the chocolate (if using) and firm up the bites.
