Description
This casserole is a delightful combination of sweet, sticky cinnamon rolls and crispy bacon, all drizzled with a luscious maple syrup glaze. It’s perfect for lazy weekend mornings or holiday gatherings.

- 2 cans of refrigerated cinnamon rolls (each 8 oz, preferably with icing included)
- 8 slices of bacon (cooked until crispy and crumbled)
- 4 large eggs (room temperature)
- 1 cup of milk (whole or 2% works best)
- 1/2 cup of maple syrup (plus extra for drizzling)
- 1 teaspoon of vanilla extract
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Grease your 9×13-inch baking dish with non-stick spray or butter.
- Remove the cinnamon rolls from the cans and cut each roll into quarters. Place them in the prepared baking dish, spreading them out evenly.
- Sprinkle the crumbled bacon over the cinnamon roll pieces, distributing it evenly.
- In a mixing bowl, whisk together the eggs, milk, maple syrup, vanilla extract, ground cinnamon, and salt until well combined.
- Pour the egg mixture evenly over the cinnamon roll and bacon layers in the baking dish. Use a spatula to gently press the rolls down to soak up the mixture.
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the casserole is puffed and golden brown.
- Once baked, remove the casserole from the oven and let it cool for about 5 minutes before serving.
- Warm the icing that came with the cinnamon rolls and drizzle it over the top. Add extra maple syrup for more sweetness if desired.
Notes
You can prepare the casserole the night before and bake it in the morning for a hot, fresh breakfast.
