This hearty stuffed Italian meatloaf is a flavor-packed experience that brings everyone to the table. It’s surprisingly easy to make and perfect for family dinners or small gatherings.

- 1 lb ground beef
- 1 lb ground pork
- 1 cup breadcrumbs (preferably Italian)
- 2 large eggs, beaten
- 1/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1/2 cup chopped bell peppers (red or green)
- 1/2 cup chopped onions
- 1/4 cup marinara sauce, plus more for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the ground beef, ground pork, breadcrumbs, beaten eggs, milk, Parmesan cheese, parsley, garlic powder, onion powder, oregano, salt, and pepper. Use your hands for the best results; just be sure not to overmix!
- In a separate bowl, mix together the mozzarella cheese, chopped bell peppers, chopped onions, and marinara sauce.
- On a clean surface, shape half of the meat mixture into a rectangular shape (about 9×5 inches). Create a slight indentation in the center.
- Spoon the stuffing mixture into the center of the meatloaf. Use the remaining meat mixture to cover the stuffing, sealing the edges to ensure the cheese doesn’t ooze out during baking.
- Carefully place the stuffed meatloaf in your prepared loaf pan. Spread a thin layer of marinara sauce on top for extra flavor.
- Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
- Once out of the oven, let your meatloaf rest for about 10 minutes before slicing.

Notes
You can prepare the meat mixture and stuff it ahead of time, then store it in the fridge until you’re ready to bake.
