Description

Funfetti Oreo Cookie Bars are chewy, buttery dessert bars loaded with crunchy Oreo pieces and rainbow sprinkles. They’re quick to make, festive, and perfect for parties or any occasion that needs a little extra fun.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup rainbow sprinkles (jimmies)
  • 14 Oreo cookies, roughly chopped

Instructions

  1. Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy lifting, or grease generously. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In another bowl, whisk melted butter, brown sugar, and granulated sugar until smooth. Beat in egg and vanilla extract until well combined.
  4. Pour wet mixture into dry ingredients. Stir with a spatula or wooden spoon until just combined; do not overmix.
  5. Fold in rainbow sprinkles and chopped Oreo cookies gently.
  6. Spread batter evenly into prepared pan. Press in extra Oreo chunks and sprinkles on top if desired.
  7. Bake for 22–26 minutes, until edges are golden and a toothpick inserted in the center comes out mostly clean.
  8. Cool completely in the pan on a wire rack for at least 30 minutes.
  9. Lift bars out using parchment overhang and slice into 20 squares. Clean knife between slices for neat edges.

Notes

For best results, use room temperature egg and cooled melted butter. Do not overmix the batter to keep bars chewy. Use jimmies sprinkles to avoid color bleeding. Let bars cool completely before slicing for clean cuts. Bars can be made gluten-free or vegan with simple swaps. Store in an airtight container for up to 4 days or freeze for up to 2 months.
