  • 1.5 lbs sirloin steak or ribeye, cut into 1-inch cubes
  • 2 tbsp olive oil (for steak)
  • 4 tbsp unsalted butter, divided
  • 5 garlic cloves, minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt (for steak)
  • 1/2 tsp freshly ground black pepper (for steak)
  • 1/4 tsp crushed red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley
  • 1.5 lbs baby Yukon Gold potatoes, halved or quartered
  • 2 tbsp olive oil (for potatoes)
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt (for potatoes)
  • 1/4 tsp black pepper (for potatoes)
  • 1 tbsp chopped fresh rosemary or thyme (optional)
  • Extra chopped parsley or chives (for garnish)
  • Lemon wedges (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C). Wash and dry potatoes, then halve or quarter them.
  2. In a large bowl, toss potatoes with 2 tbsp olive oil, Parmesan, garlic powder, 1/2 tsp salt, 1/4 tsp pepper, and herbs. Spread on a parchment-lined baking sheet, cut side down. Roast for 25-30 minutes, flipping halfway, until golden and crispy.
  3. Pat steak cubes dry with paper towels. Season with 1/2 tsp salt, 1/2 tsp pepper, and smoked paprika. Toss to coat.
  4. Heat 2 tbsp olive oil in a large cast iron skillet over medium-high until just smoking. Add steak cubes in a single layer and sear for 1-2 minutes per side until browned. Work in batches if needed. Remove steak bites to a plate and cover loosely with foil.
  5. Reduce heat to medium. Add 4 tbsp butter to the skillet. When melted, stir in minced garlic and red pepper flakes. Sauté for 1 minute until fragrant.
  6. Return steak bites to the skillet and toss to coat in garlic butter for 1 minute. Sprinkle with fresh parsley.
  7. Remove potatoes from oven. Arrange steak bites and potatoes on plates or a platter. Garnish with extra parsley, chives, and lemon wedges.

Notes

For best results, dry steak cubes thoroughly before searing and don’t overcrowd the pan. Flip potatoes halfway for extra crunch. Use fresh Parmesan for maximum crispiness. Steak bites are best cooked fresh, but potatoes can be prepped ahead. For dairy-free, use vegan butter and nutritional yeast. For low-carb, swap potatoes for cauliflower florets.
