  • 1 1/2 cups all-purpose flour
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon salt

  • 1/2 cup honey
  • 2 tablespoons sriracha or hot sauce
  • 1 teaspoon red pepper flakes (optional)
  • 1 tablespoon butter
  • 12 soft slider buns (brioche or potato rolls)
  • Pickle slices
  • Shredded lettuce (optional)
  • Mayo or ranch (optional for spread)
  • Vegetable oil for frying

Instructions

  1. Place chicken pieces in a large bowl. Add buttermilk, salt, pepper, garlic powder, and smoked paprika. Toss to coat, cover, and marinate for at least 20 minutes (up to 2 hours in the fridge).
  2. In a separate bowl, mix together flour, panko breadcrumbs, salt, and black pepper.
  3. Remove chicken from marinade, letting excess drip off. Dredge each piece in the breadcrumb-flour mixture, pressing gently to coat all sides. Place breaded chicken on a plate.
  4. Pour about 1 inch of oil into a skillet or pot. Heat over medium-high until it reaches 350°F.
  5. Fry chicken pieces in batches for 3-4 minutes per side, until golden brown and cooked through (internal temp 165°F). Transfer to a wire rack or paper towel-lined tray to drain.
  6. In a small saucepan, combine honey, sriracha, butter, and red pepper flakes. Warm gently over low heat, stirring until smooth and glossy (about 3 minutes). Remove from heat.
  7. Slice slider buns in half. Add mayo or ranch if desired. Place a piece of crispy chicken on each bun bottom, drizzle with hot honey, and top with pickles and lettuce. Cap with bun tops.
  8. Arrange sliders on a platter and serve immediately.
