Ingredients
Scale
- 3 ½ cups all-purpose flour (plus more for dusting)
- ¼ cup granulated sugar
- 1 packet (2 ¼ tsp) active dry yeast
- 1 teaspoon salt
- 1 cup whole milk, warmed (110°F/43°C)
- 4 large eggs, room temperature
- ½ cup unsalted butter, softened
- ½ cup unsalted butter, softened (for cookie dough)
- ½ cup granulated sugar (for cookie dough)
- ½ cup brown sugar, packed (for cookie dough)
- 1 teaspoon vanilla extract (for cookie dough)
- 1 cup all-purpose flour (for cookie dough)
- 1 cup semi-sweet chocolate chips
- ¼ teaspoon salt (optional, for cookie dough)
Instructions
- In a large mixing bowl, combine the warm milk and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.
- Beat in the eggs one at a time, mixing well after each addition.
- In another bowl, whisk together the flour and salt. Gradually add this to the wet mixture, mixing until just combined.
- Mix in the softened butter until the dough is smooth and elastic—about 5-7 minutes if using a stand mixer.
- Transfer the dough to a greased bowl, cover with plastic wrap, and let it rise in a warm spot until doubled in size, about 1-2 hours.
- In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Stir in the vanilla extract, then mix in the flour until just combined. Fold in the chocolate chips and refrigerate while the brioche dough rises.
- Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a rectangle about ½ inch thick.
- Spread the chilled cookie dough evenly over the rolled-out brioche. Roll the dough tightly into a log and slice it into 12 equal pieces.
- Place the sliced dough in a greased 9×13 inch baking dish, cover, and let it rise for another 30-45 minutes.
- Preheat your oven to 350°F (175°C). Once the dough has risen, bake for 25-30 minutes until golden brown. The center should be gooey and the edges crispy.
- Let the brioche bake cool for about 10 minutes, then serve warm and enjoy the gooey goodness!
