  • 1/4 teaspoon baking powder
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (heat-treated for safety)
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the melted butter and sugars until smooth. Add the eggs one at a time, mixing well after each addition, followed by the vanilla. Sift in the flour, cocoa powder, salt, and baking powder. Mix until just combined. Pour the brownie batter into the bottom of a greased springform pan.
  3. Bake in the preheated oven for about 20-25 minutes, until a toothpick inserted in the center comes out with a few moist crumbs. Remove from the oven and let it cool slightly while you prepare the cheesecake layer.
  4. In a medium bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the sugar and mix until combined. Add the eggs one at a time, mixing after each addition. Stir in the vanilla and sour cream until smooth. Pour the cheesecake batter over the baked brownie layer in the springform pan.
  5. Bake for 40-45 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for another hour to cool.
  6. While the cheesecake cools, prepare the cookie dough. In a bowl, cream together the softened butter, brown sugar, and granulated sugar. Mix in the salt and vanilla. Gradually add the heat-treated flour and mix until combined. Fold in the mini chocolate chips.
  7. Once the cheesecake has cooled completely, spread the cookie dough layer evenly on top. Chill the cheesecake in the fridge for at least 4 hours, or overnight if possible.
  8. When ready to serve, gently release the springform pan and slice the cheesecake. Serve chilled.

Notes

Make sure your cream cheese and eggs are at room temperature for a smooth mixture. Allowing the cheesecake to chill for several hours improves the texture and flavor.
