  • 1 cup whole milk (room temperature)
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (to achieve desired consistency)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your baking pan with cooking spray or butter.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, combine the melted butter, milk, eggs, and vanilla. Pour the wet ingredients into the dry ingredients and mix until just combined.
  3. In a medium bowl, mix together the brown sugar, ground cinnamon, and softened butter until well combined. This should have a paste-like consistency.
  4. Pour half of the cake batter into the prepared baking pan and spread it evenly. Then, dollop the cinnamon filling over the batter and swirl it gently with a knife. Pour the remaining batter on top and spread it out evenly.
  5. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. The top should be lightly golden.
  6. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  7. In a medium bowl, beat together the cream cheese and softened butter until smooth. Gradually add in the powdered sugar and vanilla. Mix until combined, adding milk until you reach your desired consistency.
  8. Once the cake is completely cool, drizzle the cream cheese glaze generously over the top.

Notes

Use high-quality butter and fresh cinnamon for the best flavor. For a gluten-free option, substitute a 1:1 gluten-free flour blend for the all-purpose flour.
