Description

This no-bake s’mores eclair cake captures all the deliciousness of s’mores in a quick and easy dessert, perfect for summer gatherings. With layers of creamy filling, graham crackers, and a luscious marshmallow topping, it’s a guaranteed crowd-pleaser.

  • 1 box of graham crackers (about 1416 sheets, crushed)
  • 2 cups of heavy whipping cream (cold)
  • 1 pack (3.4 oz) instant vanilla pudding mix
  • 2 cups of milk (whole or 2% work best)
  • 1 cup of chocolate syrup
  • 1 cup of mini marshmallows
  • 1/2 cup of chocolate chips (optional for extra decadence)
  • Extra graham cracker crumbs for garnish

Instructions

  1. In a large mixing bowl, combine the cold heavy whipping cream and vanilla pudding mix. Using an electric mixer, whip on medium speed until soft peaks form (about 2-4 minutes).
  2. Slowly incorporate the milk, continuing to mix until the mixture is smooth and thick (about another 2 minutes).
  3. Spread a thin layer of chocolate syrup on the bottom of a 9×13 inch baking dish to prevent sticking.
  4. Layer half of the graham crackers over the chocolate syrup, breaking pieces as needed to cover the bottom completely.
  5. Spread half of the whipped cream mixture over the graham crackers, smoothing it out evenly.
  6. Repeat the layering process: another layer of graham crackers followed by the remaining whipped cream mixture.
  7. Drizzle the rest of the chocolate syrup over the top.
  8. Sprinkle mini marshmallows and chocolate chips on top.
  9. Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.

Notes

For best results, allow the cake to chill overnight to enhance flavor and texture. You can customize the recipe by using flavored pudding or adding nuts.
