This no-bake s’mores eclair cake captures all the deliciousness of s’mores in a quick and easy dessert, perfect for summer gatherings. With layers of creamy filling, graham crackers, and a luscious marshmallow topping, it’s a guaranteed crowd-pleaser.

- 1 box of graham crackers (about 14–16 sheets, crushed)
- 2 cups of heavy whipping cream (cold)
- 1 pack (3.4 oz) instant vanilla pudding mix
- 2 cups of milk (whole or 2% work best)
- 1 cup of chocolate syrup
- 1 cup of mini marshmallows
- 1/2 cup of chocolate chips (optional for extra decadence)
- Extra graham cracker crumbs for garnish
Instructions
- In a large mixing bowl, combine the cold heavy whipping cream and vanilla pudding mix. Using an electric mixer, whip on medium speed until soft peaks form (about 2-4 minutes).
- Slowly incorporate the milk, continuing to mix until the mixture is smooth and thick (about another 2 minutes).
- Spread a thin layer of chocolate syrup on the bottom of a 9×13 inch baking dish to prevent sticking.
- Layer half of the graham crackers over the chocolate syrup, breaking pieces as needed to cover the bottom completely.
- Spread half of the whipped cream mixture over the graham crackers, smoothing it out evenly.
- Repeat the layering process: another layer of graham crackers followed by the remaining whipped cream mixture.
- Drizzle the rest of the chocolate syrup over the top.
- Sprinkle mini marshmallows and chocolate chips on top.
- Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible.
Notes
For best results, allow the cake to chill overnight to enhance flavor and texture. You can customize the recipe by using flavored pudding or adding nuts.
