- 1 ½ cups graham cracker crumbs (finely crushed)
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream (or Greek yogurt)
- ¼ cup heavy cream
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- 2 cups mini marshmallows
- 1 oz chocolate bar, for shaving (optional)
Instructions
- Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until combined. Press the mixture firmly into the bottom of a springform pan. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese and sugar with an electric mixer until smooth and creamy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and heavy cream until fully incorporated.
- Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula. Gently tap the pan on the counter to release any air bubbles.
- Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about an hour.
- Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight, to firm up.
- In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer. Remove from heat, then add the chocolate chips. Let it sit for a few minutes before stirring until smooth.
- Once the cheesecake has chilled, pour the chocolate ganache over the top and spread evenly. Top with mini marshmallows.
- Use a kitchen torch or broiler to toast the marshmallows until golden brown. Watch closely to prevent burning.
- Remove the sides of the springform pan and garnish with chocolate shavings if desired. Slice and enjoy!
Notes
For a gluten-free option, try using gluten-free graham crackers for the crust. If you find that your cheesecake cracks while baking, a little ganache and marshmallow topping will cover it up beautifully.
